Vegetarian Recipe of the Month
This drink help overcome constitutional weakness, balance minerals in the body, and improve sleep. The recipe makes a quantity for one person to drink several glasses throughout the course of one day. You can increase the amount of water or add ice as desired.
- 6 prunes
- 6 dry figs
- 2 tablespoons raisins
- 2 cups water
- 10–15 saffron threads (optional)
- ½ cup nuts (optional)
- 3 bananas, peeled and cut in big chunks
- 8 ounces plain yogurt
Pour water into a quart size bowl or container. Add prunes, figs, and raisins. Let soak overnight.
In the morning, remove pits from prunes and discard. Place pitted prunes, figs, raisins, soaking water, nuts, bananas, and yogurt in a blender and whiz until smooth. You may need to do this in two batches, depending on the size of your blender.
To serve, fill one quarter of a tall glass with crushed ice and then fill with about 12 ounces of lassi. Or, you may blend each serving with some ice for a slushier result. Add water as desired to adjust consistency.
Yield: 3–4 servings
