Vegetarian Recipe of the Month

Ingredients: 

  • 2 cups plain yogurt
  • 2 tablespoons coarsely chopped mint leaves
  • ½ teaspoon black salt
  • ½ cup ice cubes
  • Water
  • Pinch or two of ground roasted cumin seeds

Directions

Blend half of the yogurt with mint leaves until smooth. Add the rest of the yogurt and black salt and pulse a few times to combine. Ideally, the lassi is not frothy, but a smooth cool drink. Fill the glasses a third with ice and pour lassi over to fill glass. Add a pinch of roasted cumin powder (dry fry cumin powder over medium-high heat for 30 seconds until toasted and lightly browned) and garnish with mint leaves.

Yield: 1 serving
